I love SPAM muffins

2 (12-ounce) cans SPAM Classic, divided
2-1/2 cups all-purpose flour
1-1/2 cups cornmeal
1/2 cup sugar
4 teaspoons baking powder
2 cups milk
1/2 cup vegetable oil
2 eggs
1 cup canned corn
1 cup shredded Monterey Jack and Colby Cheese
heart shaped muffin pans or small disposable heart-shaped pans

Preheat oven to 400F. Slice one can of SPAM into 8 slices and set aside. In bowl, combine flour, cornmeal, sugar and baking powder. In another bowl combine milk, oil and eggs. Make a well in the center of the dry ingredients. Pour in the liquid mixture and stir until well combined. Dice the remaining SPAM and stir into the cornmeal mixture. Stir in the corn and cheese. Lightly spray the heart-shaped muffin tin or pans with nonstick cooking spray. Fill each cup 2/3 full with batter. NOTE: If using disposable foil pans, be sure to place on a baking sheet. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean. Meanwhile, cooked sliced SPAM in skillet until golden brown. Cut slices into small heart shapes using a small heart-shaped cookie cutter. Before serving, place one heart on each muffin. Makes about 2 dozen muffins.
