One of my all time favorite desserts was what Mom called Lemon Fluff Delight. I have seen similar recipes with the title of Lemon Nothing and Lemon Wind. At any rate, this is a very light, but delicious dessert.
Lemon Fluff Delight
1 14oz Can evaporated milk
1 Small box lemon Jello
1 1/2 Cup hot water
2/3 Cup sugar
1 1/2 Cups graham cracker crumbs
Chill the evaporated milk overnight.
Dissolve the Jello in the hot water.
Chill until partially set then beat until fluffy. Add the juice of one lemon and grated lemon rind and sugar.
Beat the evaporated milk until thick and fold into gelatin mixture.
Sprinkle ¼ cup graham cracker crumbs evenly over bottom of a 9 x 13 pan.
Spread the gelatin mixture over the crumbs.
Sprinkle the remaining crumbs on top. Chill several hours before serving.
