Salad, floral tips coming up

Information on floral arranging, preparing salads with toppers and finding your passion in life will be the featured topics on "Creative Living" 9:30 p.m. Tuesday and noon Thursday.

Casey Schwartz, afloral designer and co-owner of Flower Duet in Redondo Beach, Calif., is going to show how to line a glass vase with greenery and then take all of one type of flower, lay them down, gather them together, chop the stems and then drop them into the vase.

This technique is called "chop and drop."

Connie Moyers represents Mrs. Cubbison's Kitchens, and she's going to talk about the abundant selection of pre-packaged salads now available in most supermarkets, as well as all the add-ons that can be used, including croutons, tortilla strips and wonton strips. Moyers lives in Clovis.

Motivational speaker Sue Hansen says that finding your passion is predicated on the notion that you are aware of your purpose in life. She will explain how to know what you stand for and what is important to you in order to achieve this way of life. Her business is Sue Hansen Speaks and she lives in Montrose, Colo.

Information on wall coverings, making lace insets and cooking with peanuts will be the featured topics on "Creative Living" noon Tuesday and 2 p.m. Saturday.

Anne Martin represents the Wallcoverings Association in New York City. Martin will focus on wall treatments, such as murals and appliqués, that can be used alone or over existing wallpaper to add drama to a room. She'll show various room setting images.

Laura Waterfield will demonstrate how to take embroidery "beyond the hoop." Individual pieces of lace are sewn with an embroidery machine and then zigzag-stitched together to create yokes that can be used on garments or on home decor items. Waterfield is the owner of Laura's Sewing Studio in Tomball, Texas.

Gayle Stephenson represents the Texas Peanut Producers Board in Lubbock and she will demonstrate super salad recipes featuring nutritious, delicious peanuts.

Munch 'N' Go Mix

  • 2 cups roasted peanuts
  • 2 cups banana chips
  • 1 cup chopped mixed dried fruit (apricots, apples, pineapple, papaya)
  • 1 cup dried cranberries
  • 1 cup candy-coated chocolate pieces

Toss all ingredients together. Store in an airtight container at room temperature for up to three months.

Yield: 14 servings (1/2 cup per serving).

Homemade peanut butter

  • 2 cups roasted, shelled peanuts
  • 1 Tbsp. peanut oil
  • 1/2 tsp. salt (omit if salted peanuts are used)

Using the metal blade in a food processor, process ingredients continuously for 2 to 3 minutes. The ground peanuts will form a ball, which will slowly disappear.

Continue to process until the desired consistency is obtained

If necessary, stop machine and scrape sides of container with a rubber spatula. For crunchy peanut butter, stir in 1/2 cup chopped roasted peanuts after the processing is completed.

Store in a tightly closed container in the refrigerator. Oil may rise to the top. If this occurs, stir before using.

Yield: 1 cup creamy or 1 1/2 cups crunchy peanut butter.
